Ingredients
Serves: 2 portions
Prepping time: 15 min
Cooking time: 30 min
For the Strawberry Compote:
2 cups strawberries, hulled and sliced
2 tablespoons lemon juice
1 teaspoon vanilla extract
Tablespoon of honey (adjust to taste)
For the French Toast:
4 slices of bread (your choice)
2 large eggs
1/2 cup milk
1 tablespoon sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons butter
Preparation
Start by making the strawberry compote. In a saucepan, combine the sliced strawberries and lemon juice. Cook over medium heat for about 10 minutes, or until the strawberries release their juices and become slightly softened.
Reduce the heat to low and stir in the vanilla extract and honey. Adjust the sweetness according to your taste preferences. Continue cooking for another 2-3 minutes until the compote thickens slightly. Remove from heat and set aside.
In a shallow dish or bowl, whisk together the eggs, milk, sugar, brown butter, cinnamon, and nutmeg until well combined.
Heat a non-stick skillet or griddle over medium heat. Add 1 tablespoon of butter and let it melt, making sure it coats the surface of the pan.
Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side. Place the soaked bread onto the preheated skillet or griddle.
Cook the French toast for about 2-3 minutes on each side, or until golden brown and cooked through. Repeat the process with the remaining slices of bread, adding more butter to the pan if needed.
Once the French toast is ready, serve it warm with a generous spoonful of the prepared strawberry compote on top.
