Safiye shared with us the recipe for her scumptious Strawberry French Toast, a perfect example of fusion of simplicity and refinement that perfectly represents her cooking style!


Ingredients

Serves: 2 portions

Prepping time: 15 min

Cooking time: 30 min

For the Strawberry Compote:

  • 2 cups strawberries, hulled and sliced

  • 2 tablespoons lemon juice

  • 1 teaspoon vanilla extract

  • Tablespoon of honey (adjust to taste)

For the French Toast:

  • 4 slices of bread (your choice)

  • 2 large eggs

  • 1/2 cup milk

  • 1 tablespoon sugar

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 2 tablespoons butter

Preparation

  • Start by making the strawberry compote. In a saucepan, combine the sliced strawberries and lemon juice. Cook over medium heat for about 10 minutes, or until the strawberries release their juices and become slightly softened.

  • Reduce the heat to low and stir in the vanilla extract and honey. Adjust the sweetness according to your taste preferences. Continue cooking for another 2-3 minutes until the compote thickens slightly. Remove from heat and set aside.

  • In a shallow dish or bowl, whisk together the eggs, milk, sugar, brown butter, cinnamon, and nutmeg until well combined.

  • Heat a non-stick skillet or griddle over medium heat. Add 1 tablespoon of butter and let it melt, making sure it coats the surface of the pan.

  • Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side. Place the soaked bread onto the preheated skillet or griddle.

  • Cook the French toast for about 2-3 minutes on each side, or until golden brown and cooked through. Repeat the process with the remaining slices of bread, adding more butter to the pan if needed.

  • Once the French toast is ready, serve it warm with a generous spoonful of the prepared strawberry compote on top.
