My Homemade Granola

There is really nothing compared to homemade granola. It’s crunchy and sweet but not too much, and it its caramel, roasted nutty flavour is just beyond. I personally love eating it for breakfast or as a snack with some white yoghurt and fruits and as it’s quite filling and flavorful you won’t need to use much of it, a large jar goes a long way.

This is a combination of a few of my favourite recipes that I adapted to my personal taste. I don’t use any cinnamon as I loathe it, but I find that the addition fleur du sel gives it an extra tang and makes it a perfect addition as a salad and soup topping.

The better quality your honey and olive oil are, the more delish your granola. You can adjust the honey quantity depending on whether you want it more or less sweet, but I’d recommend to at least use 200g as otherwise the flavour will be pretty dull.

Gifting it to a friend makes the perfect gift: it’s easy and quick to make in large quantities. I always make huge batches as it vanishes pretty quickly.

Make sure to eat it quickly to enjoy it fresh!

Ingredients

Serves: roughly 6 medium sized jars
Prep time: 10 min prep time and about 40 min in the oven
  • 500g oats

  • 500g mixed seeds and nuts. My favorite combination is:

    • 150g pumpkin seeds

    • 150g sunflower seeds

    • 150g linen seeds

    • 50g pistachios

  • 250g honey

  • 125g olive oil

  • 12g salt crystals / fleur de sel


Preparation

  • Start by preheating your oven to 150 degrees, you’ll need it in about 10 minutes. Mix all the seeds with the oats in a bowl, one that is large enough for you to be able to stir the ingredients in thoroughly.

  • Put a small pan on medium heat and add the honey and the oil and wait until the mixture starts boiling and bubbling. Once that’s ready, take it off the heat and pour it in your bowl with all the seeds.

  • Mix it all together with a spatula, you want all the dry ingredients to be soaking in the oil and honey mix. Now you can scatter on it all the salt flakes, continue mixing so they’re evenly spread on your raw granola.

  • Prepare an oven tray with partchment paper and pour half the granola on it. Stick it in the oven and set your timer to 10 minutes: you’ll need to check and stir it nicely with a spatula to make sure it gets evenly roasted.

  • Once it’s nice and golden pour it in another bowl to cool down, and repeat the process with the remaining granola.

  • When it’s completely cooled down store it in airtight containers and enjoy!
