Rhubarb tartelettes

These rhubarb tarts are so simple to make and yet so elegant: they require very little prepping time and are as delicious as pretty.

Rhubarb is spring’s gift that keeps on giving, packed with antioxidants and simply delicious to use in the preparations of sweets thanks to its sour taste, which in this case perfectly balances the crumbly, buttery puff pastry.

Preparation requires less than 15 minutes, making it a perfect dessert option if you don’t have much time to spare.


Ingredients

Serves: 12 tartelettes

Cooking time: 45 min

Prepping time: 10 min

  • One sheet of puff pastry

  • 700 rhubarb

  • Two tablespoons of brown sugar

  • Two tablespoons of ground almonds

  • 200g greek yoghurt

  • Two tablespoons of honey

  • A hanfdul of pistachios

Preparation

  • Pre heat the oven at 220 degrees.

  • Roll out the puff pastry and cut it in 12 equal sized pieces, pierce thwm with a fork and sprinkle with the sugar and ground almonds mixed together.

  • Cut the rhubarb into evenly size pieces of roughly 10cm and place them side by side on the puff pastry.

  • Once the oven is at the right temperature, bake them on the lowest level until evenly cooked.

  • In the meanwhile mix the honey and the yoghurt.

  • Once ready, serve with a spoonful of yoghurt and honey and top with the pistachios for an extra crunch!
