The viral watermelon and feta salad

Not sure when I started seeing this salad combination in restaurants and social media but after having it fridge cold on a scorching summer day, I was sold. I’m an absolute sucker for watermelon and making it the center of a whole meal is just brilliant to me.

This recipe can hardly be called so: it is preposterously easy since it requires zero cooking or skills.

Cut it into tiny cubes and serve it as a checkerboard, and you might get a viral post. However, I would recommend serving a ratio of watermelon to feta of 5:1. You can crumble the feta on top so it coats the watermelon evenly, it doesn’t need much more other than some thinly sliced mint leaves.

You can pretty much top with whatever your heart desires: crunchy nuts, slivers of raw onion, herbs, lemon… in this version I only top it with mint and tajin for an extra kick.


Ingredients

Serves: 4 portions

Prepping time: 10 min

  • 700g watermelon

  • 180g feta cheese

  • Mint leaves

  • A sprinkle of tajin

Preparation

  • Chop the watermelon into cubes, discard the peel

  • Depending on how you wish to serve it, crumble or cube the feta

  • Serve topped with the mint leaves and a sprinkle of takin for an extra kick!
